If you love Ice Cream as much as I do, this treat will make you happy. Here is the chocolate version of my vegan ice cream. You can substitute with carob powder for an AIP compliant snack.
Ingredients:
3 frozen bananas
5 frozen strawberries
1 tbsp cinnamon powder
2 tbsp cacao powder or carob powder
150 ml dairy free milk
Carob chips or cacao nibs
Steps:
Peel 3 ripe bananas, prepare 5 strawberries and let them freeze for more than 4 hours.
On a good blender add frozen bananas, frozen strawberries, cinnamon, cacao powder and 150 ml of dairy free milk (my favorite). I use coconut milk or oat milk.
Blend for 30 seconds and do not add more milk. You can use a spatula to move mix around and keep blending until a good texture is seen. Our favorite blender here.
Split ice cream mix in 2 small mason jars or ice cream mugs and let it freeze for 2-3 hours.
After a few hours you are ready to eat your ice cream! I love adding carob "chocolate" chips on top.
This will serve 2 small servings for you and your loved one.
