Creammy Vegan Sweet Potato Soup

Have you ever had one of those days that you feel inspired and want to try out a recipe that pops in your mind? Well, I'm definitely not a chef and I created this recipe in less than 1 hour. And it turned out to be one of our favorites

 

Ingredients:

  • 2 big sweet potatoes

  • 2 garlic cloves

  • 1/2 onion

  • 1/4 cup cilantro

  • 2 tbsp coconut cream

  • 2 tbsp olive oil

  • 1 tbsp sea salt

  • 2 cups of water (depending on what texture you want)

 

Steps:

  1. Peel and cut 2 sweet potatoes in round circles.

  2. Shop 1/2 an onion and 2 garlic cloves in small pieces.

  3. In a medium sauce pan add 2 tbsp olive oil, 1/4 cup cilantro, onions, garlic, 1tbsp sea salt and sauté all the ingredients until slightly cooked.

  4. Add sweet potatoes to the sauce pan and mix it all together.

  5. Add 2 cups of water and let all the ingredients boil until sweet potatoes are easy to cut with a fork.

  6. Add everything in a blender or a food processor (our favorite). Mix until texture is perfect. If more water is needed to make it a more liquid texture you can add warm filtered water.
